Mediterranean Salmon

Ingredients ½ cup olive oil ¼ cup balsamic vinegar 4 cloves garlic, pressed

4 (4 ounce) fillets salmon 1 ½ teaspoons garlic salt 1 tablespoon chopped fresh cilantro 1 tablespoon chopped fresh basil

Directions Mix oil and vinegar in a small bowl.  

Place salmon fillets in shallow baking dish. Rub garlic on fish, then coat with oil and vinegar, flipping once. Sprinkle cilantro and basil over garlic salt. Rest 10 minutes.  

Preheat the oven's broiler and place a rack 6 inches from the heat source.  

Salmon from marinade, shake off excess. Discard all save a few teaspoons marinade.  

Broil salmon in the preheated oven for 10–12 minutes, rotating once and spraying with remaining marinade until the last 4 minutes, until browned on both sides and flakes easily with a fork.
