Preheat your oven to 350°F (175°C) and grease or line a mini muffin pan with paper liners.
In a large bowl, combine the mashed bananas, melted butter or oil, sugar, beaten egg, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
If using optional mix-ins, gently fold them into the batter until evenly distributed. Spoon the batter into the prepared mini muffin pan, filling each cup about two-thirds full.
Bake for 10-12 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
