– 1 1/2 cups all-purpose flour – 3 1/2 teaspoons baking powder – 1 teaspoon salt – 1 tablespoon granulated sugar – 1 1/4 cups milk
– 1 large egg – 3 tablespoons unsalted butter, melted – Butter or oil for greasing the skillet – Maple syrup, fresh fruit, or other toppings of your choice
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
In a separate bowl, whisk together the milk, egg, and melted butter until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if the batter is a little lumpy; overmixing can result in tough pancakes.
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon or a ladle to spread the batter into a circle if needed.
Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges start to look set. Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes, or until golden brown on the bottom and cooked through.
Remove the pancakes from the skillet and keep them warm while you cook the remaining batter. Serve the pancakes warm with maple syrup, fresh fruit, whipped cream, or your favorite toppings.
